Top US Restaurant Review - Per Se, NYC
![]()
29 August 2009
There's no denying the ambiance and commanding presence of Per Se. Located on the fourth floor of the Time Warner skyscraper, Per Se is a beautifully constructed restaurant placed right in the heart of one of New York's most treasured buildings. The property has the highest market value in the city, and the restaurant is its new crowning achievement.
After The French Laundry transformed the talented Thomas Keller into the in-demand head chef of the United States, he was able to open Per Se. The chef de cuisine is also one of the world's finest - Jonathan Benno. Per Se opened in February of 2004 to a crowd that highly anticipated good things due to Keller's' extremely high profile.
The hands-on approach the restaurant takes with its customers quickly worked to make it one of the city's biggest draws. The interior was designed by the acclaimed Adam Tihany and many aspects of The French Laundry were used in Per Se.
The restaurant is ultra-exclusive, only holding 16 tables and giving diners a unique view of Central Park via the Tower's large windows. Within the restaurant are a salon, large wine cellar, a modern bar, and a 10-person private room that acts like a VIP area for highbrow clientele.
Another aspect of The French Laundry that shows up in Per Se is the prix fixe menu choices. Prix fixe means a fixed price for preselected dishes that the chef will serve for the day. You simply order one of the two prix fixe selections, and wait to receive your 9 item small-course meal.
Per Se has amassed an impressive number of awards in only 4 short years of operation. In 2005, the restaurant was one of only four in the United States to receive a three-star rating from the Michelin Guide, an honor which was bestowed upon the restaurant again in 2007 and 2008.
Travel Leisure Magazine, one of the nation's top publications, named Per Se one of New York's top restaurants. Their biggest award comes from the New York Times, however. Known as one of the toughest publications in terms of restaurant critique, the Times awarded Per Se four stars.
Just like The French Laundry, Per Se serves an ensemble of unique, rare and pricy ingredients. Although one of the prix fixe menu selections will only cost around $275, truffle selections, imported beef, and other foreign items can cost upwards of $1000. Per Se also includes a 20% service charge that's non-negotiable and not included in the menu price. They accept reservations in advance, but it's hard to get into the small restaurant at any time of the year.
